Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts

  • 1 1/2 cups orzo
  • 1 can chicken broth (14.5 oz)
  • 1 cup milk
  • 4 ounces cream cheese
  • 1/2 cup grated parmesan cheese
  • 1 lemon, juiced and zested

Instructions

  1. Cut the chicken into bite-sized chunks and cut the cream cheese into smaller pieces for easier melting.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken, season with salt and black pepper, and cook for 3 to 4 minutes, stirring occasionally, until browned on all sides.
  3. Add the minced garlic and cook for about 1 minute until fragrant.
  4. Stir in the dry orzo and cook for 2 to 3 minutes, stirring constantly to lightly toast the pasta.

  6. Reduce the heat to low. Stir in the milk, cream cheese, parmesan cheese, lemon juice, and lemon zest.
  7. Cook while stirring constantly until the cheeses melt completely and the sauce becomes creamy and smooth.
  8. Serve warm with extra parmesan cheese or lemon slices if desired.
