Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 medium shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through, 6 to 8 minutes per side. Transfer to a plate and keep warm.
  3. Add shallot to the skillet and cook, stirring, until softened, about 1 minute. Add garlic and cook for 30 seconds.
  4. Sprinkle flour over the shallot mixture and cook, stirring, for 1 minute.
  5. Gradually whisk in chicken broth and bring to a simmer. Cook until slightly thickened, about 2 minutes.
  6. Stir in cream, dill, lemon juice, and lemon zest. Return the chicken to the skillet and simmer until heated through, about 2 minutes.
  7. Serve hot, garnished with additional dill or lemon zest if desired.
