Description
This creamy lemon Greek yogurt pasta is bright, tangy, and packed with protein. A silky yogurt-based sauce with garlic, parmesan, and juicy cherry tomatoes makes this an easy and satisfying dinner.
Ingredients
- 10 ounces protein pasta
- 2 Tablespoons olive oil
- 1 medium shallot, finely chopped
- 1 Tablespoon minced garlic
- 1/4 cup fresh lemon juice
- 1/2 teaspoon crushed red pepper
- 1 teaspoon lemon zest
- 1 cup whole cherry tomatoes
- 1/4 cup cream cheese
- 3/4 cup plain Greek yogurt
- 1/2 cup grated parmesan cheese
- Fresh parsley, finely chopped
- 1/4 cup reserved pasta water
Instructions
- Cook the protein pasta according to package directions. Reserve 1/4 cup of pasta water, then drain the pasta and set aside.
- In a large high-sided pan over medium heat, add olive oil, chopped shallot, and minced garlic. Cook for 2-3 minutes until fragrant.
- Stir in the lemon juice, crushed red pepper, lemon zest, and cherry tomatoes. Cook for another 2-3 minutes until the tomatoes begin to soften.
- Add the cream cheese and stir until melted into the sauce.
- In a separate bowl, slowly whisk the warm pasta water into the Greek yogurt to temper it.
- Reduce the heat to low and slowly pour the yogurt mixture into the pan while whisking continuously for about 5 minutes until smooth and creamy.
- Remove the pan from the heat and toss in the cooked pasta until evenly coated.
- Top with grated parmesan cheese and fresh parsley before serving.
Notes
- Tempering the yogurt helps prevent curdling when added to the warm sauce.
- Add extra pasta water if needed to loosen the sauce.
- For extra protein, add grilled chicken or shrimp.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
