Ingredients
- 4 chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 small onion, chopped
- 8 oz mushrooms (cremini or button), sliced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon thyme or Italian seasoning
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Season the chicken breasts on both sides with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Sear the chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add butter and sauté the chopped onion and garlic until fragrant and softened.
- Add the sliced mushrooms and cook until browned and their moisture has evaporated.
- Pour in the chicken broth and scrape the bottom of the pan to deglaze. Let it reduce slightly.
- Stir in the heavy cream and Parmesan cheese. Cook until the sauce thickens.
- Return the chicken to the skillet, coat with the sauce, and simmer for a few more minutes.
- Garnish with fresh parsley and serve hot.
