Description

Ingredients

  • 4 chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 8 oz mushrooms (cremini or button), sliced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon thyme or Italian seasoning
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season the chicken breasts on both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear the chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, add butter and sauté the chopped onion and garlic until fragrant and softened.
  4. Add the sliced mushrooms and cook until browned and their moisture has evaporated.
  5. Pour in the chicken broth and scrape the bottom of the pan to deglaze. Let it reduce slightly.
  6. Stir in the heavy cream and Parmesan cheese. Cook until the sauce thickens.
  7. Return the chicken to the skillet, coat with the sauce, and simmer for a few more minutes.
  8. Garnish with fresh parsley and serve hot.
