Ingredients

  • 1 Tbs olive oil
  • 1 pound ground Italian sausage
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 2 Tbs tomato paste
  • 28 oz crushed tomatoes
  • 1/2 cup heavy cream (room temp)
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup fresh basil, shredded
  • 1 Tbs Italian seasoning
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 pound mezzi rigatoni

Instructions

  1. Heat olive oil in a large pan over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces. Add chopped onion and cook until softened. Stir in minced garlic and cook for about 30 seconds until fragrant, then mix in tomato paste and cook for 2 minutes.
  2. Add crushed tomatoes and season with salt, pepper, garlic powder, and Italian seasoning. Simmer the sauce for about 20 minutes. Stir in heavy cream and Parmesan cheese until smooth and creamy, then add fresh basil.
  3. Toss the sauce with cooked mezzi rigatoni until fully coated. Serve warm.

Notes

  • Reserve some pasta water to loosen the sauce if it becomes too thick.
  • Substitute half-and-half for a lighter version of the sauce.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
