Description

This creamy shrimp with spinach is a quick and easy weeknight dinner made with tender shrimp cooked in a rich garlic parmesan cream sauce and fresh spinach. It’s low-carb, keto-friendly, and ready in just 20 minutes!


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 3 cups fresh baby spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add shrimp and season with salt and pepper. Cook for about 1-2 minutes per side or until pink and opaque. Remove shrimp and set aside.
  2. In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and let it simmer for 2-3 minutes to reduce slightly.
  4. Add heavy cream and Parmesan cheese. Stir continuously until the cheese is melted and the sauce thickens.
  5. Stir in red pepper flakes, if using.
  6. Add fresh spinach and cook for 1-2 minutes until wilted.
  7. Return shrimp to the skillet and toss to coat in the sauce. Simmer for another 2 minutes.
  8. Adjust seasoning with additional salt and pepper if needed. Serve immediately.

Notes

  • You can substitute chicken broth with vegetable broth or white wine for a different flavor.
  • Serve with pasta, rice, or mashed potatoes if not following a low-carb diet.
  • Use pre-cooked shrimp to save time, just heat through instead of cooking.
