Description

A creamy and comforting bowtie pasta dish loaded with spinach and tomatoes, finished with Parmesan for a rich, satisfying meal.


Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 4 cloves garlic, minced
  • 14 oz can diced tomatoes
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 lb bow tie pasta, cooked (plus a ladle of pasta water)
  • 2 cups fresh baby spinach
  • 1/4 cup Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chopped onion and sauté until softened, stirring occasionally. Add minced garlic and cook for 1 more minute.
  2. Stir in diced tomatoes with their juices and slowly pour in the heavy cream. Season with salt, pepper, Italian seasoning, and garlic powder.
  3. Mix well and reduce heat to low. Let the sauce simmer for about 5 minutes until slightly thickened. Stir in reserved pasta water and cooked bow tie pasta.
  4. Add spinach in batches, stirring until wilted. Stir in Parmesan cheese, then serve warm.

Notes

  • Use half-and-half instead of heavy cream for a lighter version.
  • Add grilled chicken or shrimp for extra protein.
  • Reserve pasta water to help loosen and bind the sauce.
  • Store leftovers in the refrigerator for up to 3 days.
