A creamy and comforting bowtie pasta dish loaded with spinach and tomatoes, finished with Parmesan for a rich, satisfying meal.
Ingredients
- 1 tbsp olive oil
- 1/2 onion, chopped
- 4 cloves garlic, minced
- 14 oz can diced tomatoes
- 1/2 cup heavy cream
- Salt and pepper, to taste
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 lb bow tie pasta, cooked (plus a ladle of pasta water)
- 2 cups fresh baby spinach
- 1/4 cup Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chopped onion and sauté until softened, stirring occasionally. Add minced garlic and cook for 1 more minute.
- Stir in diced tomatoes with their juices and slowly pour in the heavy cream. Season with salt, pepper, Italian seasoning, and garlic powder.
- Mix well and reduce heat to low. Let the sauce simmer for about 5 minutes until slightly thickened. Stir in reserved pasta water and cooked bow tie pasta.
- Add spinach in batches, stirring until wilted. Stir in Parmesan cheese, then serve warm.
Notes
- Use half-and-half instead of heavy cream for a lighter version.
- Add grilled chicken or shrimp for extra protein.
- Reserve pasta water to help loosen and bind the sauce.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat gently with a splash of milk or water to restore creaminess.
