Ingredients

  • 1 (16 ounce) package refrigerated cheese tortellini
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup heavy cream
  • 1/4 teaspoon ground nutmeg
  • Salt and ground black pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add the tortellini and cook according to the package directions; drain.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 to 2 minutes until fragrant.
  3. Add the thawed and drained spinach to the skillet and cook for about 2 minutes, stirring frequently.
  4. Pour in the heavy cream and season with nutmeg, salt, and pepper. Bring the mixture to a simmer and cook for 3 to 4 minutes until slightly thickened.
  5. Stir in the cooked tortellini and Parmesan cheese. Cook for an additional 2 minutes, or until everything is heated through and well coated in the sauce.
  6. Serve hot, garnished with extra Parmesan if desired.
