Description

Creamy Sun Dried Tomato Pasta is a rich, indulgent dish featuring tender pasta coated in a velvety sauce made from sun-dried tomatoes, garlic, cream, and Parmesan. It’s easy, flavorful, and perfect for both weeknight dinners and special occasions.

Ingredients

  • 12 oz pasta (such as penne, fettuccine, or spaghetti)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)
  • Red pepper flakes, to taste (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped sun-dried tomatoes and cook for 2-3 minutes to release their flavor.
  4. Pour in the heavy cream and bring to a gentle simmer.
  5. Stir in the grated Parmesan cheese and mix until the cheese is melted and the sauce thickens.
  6. Season with salt, pepper, and red pepper flakes if using.
  7. Add the cooked pasta to the skillet and toss to coat evenly. Use reserved pasta water as needed to loosen the sauce.
  8. Serve immediately, garnished with fresh basil if desired.

Notes

  • Add cooked chicken, shrimp, or sausage for extra protein.
  • Use dairy-free alternatives and vegan cheese to make it plant-based.
  • Incorporate veggies like spinach, mushrooms, or kale for added nutrition.
  • Use gluten-free pasta if needed.
  • Goat cheese or cream cheese can be used for a different creamy flavor.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat gently with a splash of milk or cream to maintain texture.
