Description

This creamy taco soup is a hearty and flavorful dish made with ground beef, beans, corn, tomatoes, and taco seasoning in a creamy, cheesy broth. It’s a quick and easy meal perfect for busy weeknights or cozy evenings.


Ingredients

  • 1 lb ground beef
  • 1 oz taco seasoning (1 packet)
  • 10.5 oz cream of chicken soup (1 can)
  • 8 oz cream cheese
  • 15.25 oz corn, drained (1 can)
  • 15.5 oz black beans, drained and rinsed (1 can)
  • 10 oz diced tomatoes with green chilies (1 can)
  • 1 cup salsa
  • 1 cup chicken broth

Instructions

  1. In a large pot, cook the ground beef over medium heat until fully browned. Drain any excess fat.
  2. Add taco seasoning to the beef and stir until well combined.
  3. Add the cream of chicken soup, cream cheese, corn, black beans, diced tomatoes with green chilies, salsa, and chicken broth to the pot.
  4. Stir everything together until the cream cheese is melted and the soup is well mixed.
  5. Reduce heat to low and simmer for about 15–20 minutes, stirring occasionally.
  6. Serve hot with your favorite toppings like shredded cheese, sour cream, or tortilla chips.
