Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup heavy cream
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook until browned on both sides, about 5-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add diced onion and garlic. Cook until softened, about 3-4 minutes.
- Add the diced tomatoes (with juices) to the skillet and bring to a simmer.
- Stir in the heavy cream and dried basil. Season with salt and pepper.
- Return the chicken breasts to the skillet and spoon the tomato cream sauce over them.
- Cover and let simmer for 15-20 minutes, or until the chicken is cooked through.
- Garnish with fresh basil leaves before serving.

- Serve with rice, pasta, or crusty bread to soak up the creamy tomato sauce.
- You can substitute chicken thighs for extra juiciness.
