Ingredients

  • 2 cups turkey drippings or low-sodium chicken broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 cup half-and-half or heavy cream
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. In a saucepan, melt butter over medium heat.
  2. Whisk in the flour and cook for 1 to 2 minutes to form a roux.
  3. Gradually pour in turkey drippings or broth, whisking constantly to prevent lumps.
  4. Bring the mixture to a boil, then reduce heat and simmer for 5 to 7 minutes until thickened.
