Description
Creamy White Cheese Chicken Lasagna is a rich and comforting twist on the classic lasagna, featuring layers of tender chicken, spinach, and a silky white sauce, all baked to golden perfection.
Ingredients
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 2 cups milk or heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup grated parmesan cheese (plus extra for topping)
- 9–12 lasagna noodles (boiled or no-boil)
- 3 cups cooked chicken, shredded or cubed
- 1 1/2 cups ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- 2 cups spinach (fresh or thawed and drained if frozen)
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat oven to 350°F (175°C). Cook lasagna noodles according to package instructions if not using no-boil noodles. Drain and set aside.
- In a saucepan, melt butter over medium heat. Add chopped onion and sauté until soft, about 3–4 minutes. Add garlic and cook for another minute.
- Whisk in the flour and cook for 1–2 minutes until lightly golden.
- Gradually whisk in the chicken broth and milk or cream, stirring constantly to avoid lumps. Cook until thickened, about 5–7 minutes.
- Stir in salt, pepper, and 1 cup of parmesan cheese until melted and smooth. Remove from heat and set aside.
- In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, and Italian seasoning (if using).
- Spread a thin layer of white sauce on the bottom of a 9×13-inch baking dish. Layer noodles, ricotta mixture, chicken, spinach, and more sauce. Repeat layers.
- Top with remaining mozzarella cheese and a generous sprinkle of parmesan cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10–20 minutes, or until top is golden and bubbly.
- Let rest for 10 minutes before slicing and serving.
Notes
- No-boil noodles save time but require extra sauce for proper cooking.
- Use leftover or rotisserie chicken for convenience.
- Frozen spinach should be thawed and well-drained before use.
- Make ahead and refrigerate overnight before baking for easy meal prep.
