Description

Creamy White Cheese Chicken Lasagna is a rich and comforting twist on the classic lasagna, featuring layers of tender chicken, spinach, and a silky white sauce, all baked to golden perfection.


Ingredients

  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups milk or heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup grated parmesan cheese (plus extra for topping)
  • 912 lasagna noodles (boiled or no-boil)
  • 3 cups cooked chicken, shredded or cubed
  • 1 1/2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 2 cups spinach (fresh or thawed and drained if frozen)
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Cook lasagna noodles according to package instructions if not using no-boil noodles. Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Add chopped onion and sauté until soft, about 3–4 minutes. Add garlic and cook for another minute.
  3. Whisk in the flour and cook for 1–2 minutes until lightly golden.
  4. Gradually whisk in the chicken broth and milk or cream, stirring constantly to avoid lumps. Cook until thickened, about 5–7 minutes.
  5. Stir in salt, pepper, and 1 cup of parmesan cheese until melted and smooth. Remove from heat and set aside.
  6. In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, and Italian seasoning (if using).
  7. Spread a thin layer of white sauce on the bottom of a 9×13-inch baking dish. Layer noodles, ricotta mixture, chicken, spinach, and more sauce. Repeat layers.
  8. Top with remaining mozzarella cheese and a generous sprinkle of parmesan cheese.
  9. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10–20 minutes, or until top is golden and bubbly.
  10. Let rest for 10 minutes before slicing and serving.

Notes

  • No-boil noodles save time but require extra sauce for proper cooking.
  • Use leftover or rotisserie chicken for convenience.
  • Frozen spinach should be thawed and well-drained before use.
