Description

These Crispy Baked Chicken Taquitos are filled with seasoned shredded chicken and cheese, rolled in tortillas and baked to golden perfection for a delicious and healthier alternative to frying.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 10 small flour or corn tortillas
  • Cooking spray

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment paper and lightly spray with cooking spray.
  2. In a large bowl, combine the shredded chicken, chili powder, garlic powder, onion powder, cumin, salt, black pepper, and paprika. Mix until well combined.
  3. Add the shredded cheddar and Monterey Jack cheese to the chicken mixture and stir until evenly distributed.
  4. Warm the tortillas slightly to make them more pliable (about 20-30 seconds in the microwave).
  5. Place about 2 tablespoons of the chicken mixture along the bottom third of a tortilla, then roll it up tightly.
  6. Place the rolled taquito seam-side down on the prepared baking sheet. Repeat with remaining tortillas and filling.
  7. Lightly spray the tops of the taquitos with cooking spray to help them crisp up in the oven.
  8. Bake for 15–20 minutes, or until the taquitos are golden and crispy.
  9. Remove from oven and let cool slightly before serving with your favorite dipping sauces.

Notes

  • You can use rotisserie chicken to save time.
  • Serve with salsa, sour cream, or guacamole.
  • These freeze well before or after baking for an easy make-ahead meal.
