Ingredients
- 1 large head of cauliflower (about 2 pounds), cut into florets
- 3 tablespoons olive oil
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3/4 cup grated Parmesan cheese, divided
- 1 garlic clove, finely grated
- 1 teaspoon lemon zest
- 1 tablespoon chopped parsley, for garnish
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, half of the Parmesan cheese, and the garlic until evenly coated.
- Spread the cauliflower evenly on the prepared baking sheet, cut side down as much as possible for better browning.
- Roast in the oven for 25 to 30 minutes, until the cauliflower is golden and crispy around the edges.
- Remove from the oven and immediately toss with the remaining Parmesan cheese and lemon zest.
- Transfer to a serving bowl and garnish with chopped parsley before serving.
