A decadent twist on classic Alfredo pasta, featuring golden-fried chicken breast served over creamy fettuccine tossed in a rich homemade Parmesan sauce.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil or butter (for frying)
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- 8 oz fettuccine pasta
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until al dente. Drain and set aside.
- Pat the chicken breasts dry and season with salt, pepper, garlic powder, and paprika.
- Dredge each chicken breast in flour, dip into the beaten eggs, and coat with panko breadcrumbs.
- Heat olive oil or butter in a skillet over medium heat. Fry the chicken for 3-4 minutes on each side until golden brown and cooked through. Transfer to a plate and let rest.
- In a separate pan, melt butter over medium heat. Add minced garlic and sauté for 1 minute.
- Pour in the heavy cream, then stir in Parmesan cheese and Italian seasoning. Simmer for 3-5 minutes until the sauce thickens. Season with salt and pepper to taste.
- Add the cooked fettuccine to the Alfredo sauce and toss to coat well.
- Slice the crispy chicken and place it over the pasta. Garnish with fresh chopped parsley and serve warm.
Notes
- For extra crispiness, double-coat the chicken by repeating the egg and breadcrumb step.
- You can substitute heavy cream with half-and-half for a lighter sauce.
- Use freshly grated Parmesan for best flavor and texture.
