Instructions
- In a bowl, whisk together the flour, cornstarch, baking powder, salt, and granulated sugar.
- In a separate bowl, beat the egg, milk, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture and whisk until a thick batter forms.
- Place the breadcrumbs or crushed cereal in a shallow bowl.
- Skewer each marshmallow (optional), dip it into the batter, then roll in the breadcrumbs to fully coat. For extra crispness, repeat the coating process once more.
- Heat vegetable oil in a deep pot to about 180°C (350°F).
- Fry the coated marshmallows in batches for 1–1½ minutes, turning until golden brown on all sides.
- Remove with a slotted spoon and place on paper towels to drain excess oil.
- Dust with powdered sugar or drizzle with melted chocolate if desired, and serve immediately while warm.
