Description

This crispy gnocchi with spinach and feta is a quick, delicious vegetarian meal made with pan-fried gnocchi, tender spinach, creamy feta, and a touch of garlic and lemon for brightness.


Ingredients

  • 1 lb (500g) potato gnocchi
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • Optional: red pepper flakes, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add gnocchi in a single layer and cook for 7–10 minutes, stirring occasionally, until golden and crispy.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add spinach and sauté for 1–2 minutes, until wilted.
  5. Remove from heat and stir in lemon juice, salt, and pepper.
  6. Top with crumbled feta cheese and optional red pepper flakes before serving.

Notes

  • Use shelf-stable or fresh gnocchi — both work well.
  • Don’t overcrowd the pan to ensure the gnocchi gets crispy.
  • You can add extra veggies like mushrooms or cherry tomatoes.
  • Leftovers store well in the fridge for up to 3 days.
