Description

These crispy lentils are a simple, protein-packed snack or topping with a satisfying crunch and savory flavor. Perfect for salads, bowls, or enjoying on their own.


Ingredients

  • 1 cup dried lentils (green or brown)
  • 3 cups vegetable broth
  • 1 tablespoon oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • non-stick spray

Instructions

  1. Rinse and drain the lentils to remove any debris. Add the lentils and vegetable broth to a small pot, bring to a boil, then reduce to a simmer and cook for 18 to 20 minutes. Meanwhile, preheat the oven to 425°F.
  2. Once the lentils are cooked, strain them and gently pat dry with a paper towel to remove excess moisture.
  3. Transfer the lentils to a mixing bowl and add the oil, garlic powder, onion powder, and salt. Toss well to coat evenly.
  4. Lightly coat a sheet pan with non-stick spray and spread the lentils in a thin, even layer.
  5. Roast for 15 to 20 minutes, stirring halfway through. For extra crispiness, broil for an additional 2 minutes at the end.

Notes

  • Make sure lentils are very dry before roasting to achieve maximum crispiness.
  • Store leftovers in an airtight container at room temperature for up to 2 days.
