Description

Deliciously crispy salmon served with a tangy orange glaze over a bed of fluffy jasmine rice and steamed broccoli. A healthy and flavorful weeknight dinner with Asian-inspired flair.


Ingredients

  • 4 salmon fillets
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 cups cooked jasmine rice
  • 2 cups broccoli florets
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the salmon fillets with salt and pepper and place them on a baking sheet lined with parchment paper.
  3. Bake the salmon for 15–20 minutes, or until crispy and cooked through.
  4. In a small saucepan, combine the orange juice, soy sauce, and honey. Bring to a simmer over medium heat.
  5. In a separate bowl, mix the cornstarch and water to create a slurry.
  6. Slowly pour the slurry into the simmering sauce, stirring constantly until thickened. Remove from heat.
  7. Steam the broccoli florets until tender, then set aside.
  8. To assemble the bowls, divide the cooked jasmine rice among four bowls.
  9. Top each with a salmon fillet, steamed broccoli, and a generous drizzle of the orange glaze.
  10. Garnish with sesame seeds and sliced green onions before serving.

Notes

  • For extra crispy salmon, broil for the last 2 minutes of baking.
  • You can substitute tamari for a gluten-free option.
  • Freshly squeezed orange juice enhances flavor.
