Ingredients
- 1 large egg
- 1/3 cup buttermilk (or regular milk)
- 1 cup all purpose flour
- 4 tablespoons breadcrumbs (Panko or Italian seasoned)
- 1 teaspoon baking powder
- 1.5 teaspoons salt
- 2 teaspoons ground paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground pepper
- 2 pounds boneless, skinless chicken breast (cut into strips)
- 1/4 cup butter (or more as needed)
Instructions
- Preheat oven to 410°F and place a dark-colored or cast iron pan inside to heat.
- In a medium bowl, whisk together the egg and buttermilk. In a separate bowl, combine flour, breadcrumbs, baking powder, salt, paprika, garlic powder, onion powder, and pepper.
- Coat chicken pieces in the flour mixture, shaking off excess. Dip into the egg mixture, then coat again in the flour mixture, pressing to adhere well.
- Remove the hot pan from the oven and melt the butter on it. Place coated chicken pieces on the pan with space between them.
- Bake for 10-12 minutes, flip carefully, and bake another 5-10 minutes depending on thickness. Add more butter if needed. Broil for 1-2 minutes until golden and crispy.
- Let rest for 2-3 minutes before serving.
Notes
- You can substitute buttermilk with regular milk or milk mixed with a little lemon juice or vinegar.
- Do not overcrowd the pan; cook in batches if needed for crispier results.
- Adjust seasoning to taste.
