Description
Crispy Pizza Smashed Potatoes are golden roasted baby potatoes smashed and topped with marinara sauce, melted mozzarella, and your favorite pizza toppings for a fun and delicious twist on classic pizza.
Ingredients
- 1 1/2 lbs baby potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup mini pepperoni slices
- 1 teaspoon Italian seasoning
- 2 tablespoons grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil the baby potatoes in salted water for 15-20 minutes or until fork tender. Drain and let cool slightly.
- Place the potatoes on the prepared baking sheet and gently smash each one using the bottom of a glass.
- Brush the smashed potatoes with olive oil and season with salt, pepper, and garlic powder.
- Bake for 20-25 minutes until crispy and golden brown.
- Remove from oven and top each potato with marinara sauce, mozzarella cheese, mini pepperoni, Italian seasoning, and Parmesan.
- Return to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
- Garnish with fresh basil or parsley if desired and serve warm.
Notes
- Make sure the potatoes are fully tender before smashing to prevent breaking.
- You can customize toppings with vegetables like bell peppers, olives, or mushrooms.
- For extra crispiness, broil for 1-2 minutes at the end.
