Description

Crispy Pizza Smashed Potatoes are golden roasted baby potatoes smashed and topped with marinara sauce, melted mozzarella, and your favorite pizza toppings for a fun and delicious twist on classic pizza.


Ingredients

  • 1 1/2 lbs baby potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni slices
  • 1 teaspoon Italian seasoning
  • 2 tablespoons grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil the baby potatoes in salted water for 15-20 minutes or until fork tender. Drain and let cool slightly.
  3. Place the potatoes on the prepared baking sheet and gently smash each one using the bottom of a glass.
  4. Brush the smashed potatoes with olive oil and season with salt, pepper, and garlic powder.
  5. Bake for 20-25 minutes until crispy and golden brown.
  6. Remove from oven and top each potato with marinara sauce, mozzarella cheese, mini pepperoni, Italian seasoning, and Parmesan.
  7. Return to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh basil or parsley if desired and serve warm.
