Ingredients

  • 2 large sweet potatoes, peeled and cut into 1/2-inch thick rounds
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 2 oz feta cheese, crumbled
  • 12 tbsp honey, for drizzling
  • Fresh parsley or mint, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato rounds with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
  3. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
  4. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
  5. Transfer roasted sweet potatoes to a serving plate.
  6. Drizzle with honey, sprinkle crumbled feta on top, and garnish with fresh parsley or mint.
  7. Serve warm or at room temperature.
