Description
This roasted sweet potato with honey and feta recipe combines caramelized sweet potatoes with a drizzle of honey, tangy feta, and fresh herbs for a deliciously sweet and savory side dish or appetizer.
Ingredients
- 2 large sweet potatoes, peeled and cut into 1/2-inch thick rounds
- 2 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 2 oz feta cheese, crumbled
- 1–2 tbsp honey, for drizzling
- Fresh parsley or mint, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, toss sweet potato rounds with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
- Arrange the sweet potato slices in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until golden and tender.
- Transfer roasted sweet potatoes to a serving plate.
- Drizzle with honey, sprinkle crumbled feta on top, and garnish with fresh parsley or mint.
- Serve warm or at room temperature.
Notes
- Adjust the amount of honey to taste if you prefer it less sweet.
- Use vegan feta and maple syrup to make it vegan-friendly.
