Description

These crispy roasted sweet potatoes are perfectly caramelized on the outside and tender on the inside, making them an easy and flavorful side dish for any meal.


Ingredients

  • 2 pounds sweet potatoes
  • 3 tablespoons olive oil
  • 1 tablespoon cornstarch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and cut the sweet potatoes into 1/2-inch cubes for even roasting.
  3. In a large bowl, toss the sweet potato cubes with olive oil until well coated.
  4. Sprinkle cornstarch over the sweet potatoes and toss again to coat evenly.
  5. Add salt, pepper, garlic powder, and smoked paprika. Toss once more to combine.
  6. Spread the sweet potatoes out on the prepared baking sheet in a single layer, ensuring pieces don’t touch.
  7. Roast for 15 minutes, then flip the sweet potatoes and roast for another 10 to 15 minutes, until crispy and golden brown on the edges.
  8. Remove from oven and serve immediately.

Notes

  • Cutting the sweet potatoes evenly helps them cook uniformly and get crispy.
  • Don’t overcrowd the baking sheet, or the sweet potatoes will steam instead of roast.
