Ingredients
- 2 pounds sweet potatoes
- 3 tablespoons olive oil
- 1 tablespoon cornstarch
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Peel and cut the sweet potatoes into 1/2-inch cubes for even roasting.
- In a large bowl, toss the sweet potato cubes with olive oil until well coated.
- Sprinkle cornstarch over the sweet potatoes and toss again to coat evenly.
- Add salt, pepper, garlic powder, and smoked paprika. Toss once more to combine.
- Spread the sweet potatoes out on the prepared baking sheet in a single layer, ensuring pieces don’t touch.
- Roast for 15 minutes, then flip the sweet potatoes and roast for another 10 to 15 minutes, until crispy and golden brown on the edges.
- Remove from oven and serve immediately.
Notes
- Cutting the sweet potatoes evenly helps them cook uniformly and get crispy.
- Don’t overcrowd the baking sheet, or the sweet potatoes will steam instead of roast.
