Description
Crispy Smashed Carrot Bites are a delicious and healthy side dish or snack made by boiling carrots until tender, smashing them, and roasting them to perfection with seasonings and a drizzle of honey.
Ingredients
- 1 lb carrots, peeled
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1 tbsp honey
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Bring a large pot of salted water to a boil.
- Add peeled carrots and boil until fork-tender, about 15–20 minutes depending on thickness.
- Drain the carrots and let them cool slightly.
- Place carrots on the prepared baking sheet and gently smash each one with the bottom of a glass or measuring cup.
- Drizzle with olive oil and season with garlic powder, onion powder, salt, and pepper.
- Roast for 20–25 minutes until crispy and golden on the edges.
- Drizzle with honey and garnish with fresh parsley before serving.
Notes
- Use evenly sized carrots to ensure even cooking.
- You can substitute maple syrup for honey for a vegan option.
- Smash gently to avoid breaking the carrots apart completely.
