Description

Crispy Smashed Carrot Bites are a delicious and healthy side dish or snack made by boiling carrots until tender, smashing them, and roasting them to perfection with seasonings and a drizzle of honey.


Ingredients

  • 1 lb carrots, peeled
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1 tbsp honey
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Bring a large pot of salted water to a boil.
  3. Add peeled carrots and boil until fork-tender, about 15–20 minutes depending on thickness.
  4. Drain the carrots and let them cool slightly.
  5. Place carrots on the prepared baking sheet and gently smash each one with the bottom of a glass or measuring cup.
  6. Drizzle with olive oil and season with garlic powder, onion powder, salt, and pepper.
  7. Roast for 20–25 minutes until crispy and golden on the edges.
  8. Drizzle with honey and garnish with fresh parsley before serving.

  • Use evenly sized carrots to ensure even cooking.
  • You can substitute maple syrup for honey for a vegan option.
  • Smash gently to avoid breaking the carrots apart completely.
