Description
Tender, slow-cooked beef tips infused with rich French onion flavors and topped with melted mozzarella cheese for a comforting, savory meal.
Ingredients
- 2–3 pounds chuck roast
- 2 tbsp vegetable oil
- 1 large yellow or white onion, sliced thin
- 1 oz au jus packet (low sodium preferred)
- 1 oz beefy onion soup mix (low sodium preferred)
- 1 oz French onion soup
- 1/2 stick unsalted butter, cut into pats
- 1 cup mozzarella cheese
- 1 tbsp black pepper
- 2 tbsp parsley (optional)
Instructions
- Cut the chuck roast into 1–2 inch pieces and season with black pepper.
- Heat vegetable oil in a large skillet and brown the beef pieces for 1–2 minutes on each side.
- Spray the inside of the crockpot with cooking spray and layer the sliced onions on the bottom.
- Add the browned beef on top of the onions and sprinkle with the au jus packet and beefy onion soup mix.
- Pour the French onion soup over the beef and top with pats of butter.
- Cover and cook on low for 6–8 hours.
- Once cooked, sprinkle mozzarella cheese over the beef and add parsley if desired.
- Cover again and let the cheese melt for 5–10 minutes before serving warm.
Notes
- Use low sodium soup mixes to control salt levels.
- Gruyere or provolone cheese can be substituted for mozzarella for a more classic French onion flavor.
- Serve over mashed potatoes, rice, or egg noodles.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- This recipe can be frozen for up to 2 months.
