Ingredients

  • 2 pounds ground beef
  • 2 eggs
  • 2 packets Lipton onion soup mix
  • 1 small onion, chopped
  • 1 cup Ritz crackers, crushed
  • 1/4 cup milk
  • 1/4 cup ketchup
  • Salt and pepper to taste
  • 1 tablespoon garlic powder
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup ketchup (for glaze)
  • 1/2 cup brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. In a large bowl, combine ground beef, eggs, onion soup mix, chopped onion, milk, ketchup, and crushed Ritz crackers. Season with salt, pepper, and garlic powder, then mix gently until just combined.
  2. Line a crockpot with two layers of aluminum foil and place the formed meatloaf on top.
  3. In a small bowl, mix together ketchup, brown sugar, and Worcestershire sauce to make the glaze. Spread evenly over the meatloaf.
  4. Cover and cook on low for 6 hours.
  5. Carefully lift the foil to remove the meatloaf, leaving excess liquid behind, and transfer to a cutting board.
  6. Garnish with chopped parsley if desired, slice, and serve.
