Description
A rich and savory crockpot French onion meatloaf infused with onion soup mix and topped with a sweet, tangy glaze. Slow-cooked to perfection for a tender, flavorful main dish.
Ingredients
- 2 pounds ground beef
- 2 eggs
- 2 packets Lipton onion soup mix
- 1 small onion, chopped
- 1 cup Ritz crackers, crushed
- 1/4 cup milk
- 1/4 cup ketchup
- Salt and pepper to taste
- 1 tablespoon garlic powder
- 1/4 cup fresh parsley, chopped
- 1/2 cup ketchup (for glaze)
- 1/2 cup brown sugar
- 1 tablespoon Worcestershire sauce
Instructions
- In a large bowl, combine ground beef, eggs, onion soup mix, chopped onion, milk, ketchup, and crushed Ritz crackers. Season with salt, pepper, and garlic powder, then mix gently until just combined.
- Line a crockpot with two layers of aluminum foil and place the formed meatloaf on top.
- In a small bowl, mix together ketchup, brown sugar, and Worcestershire sauce to make the glaze. Spread evenly over the meatloaf.
- Cover and cook on low for 6 hours.
- Carefully lift the foil to remove the meatloaf, leaving excess liquid behind, and transfer to a cutting board.
- Garnish with chopped parsley if desired, slice, and serve.
Notes
- Avoid overmixing the meat to keep the meatloaf tender.
- You can substitute ground turkey for a lighter option.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Serve with mashed potatoes or roasted vegetables for a complete meal.
