Description

This Crockpot Pineapple BBQ Chicken is the perfect dish for a busy day, combining the savory richness of BBQ chicken with the sweet and tangy flavors of pineapple. With minimal prep and the convenience of a slow cooker, this meal will have your taste buds dancing and your kitchen smelling amazing.

Ingredients

4 boneless, skinless chicken breasts

1 cup BBQ sauce

1 cup pineapple chunks (fresh or canned)

2 tbsp brown sugar

1 tbsp soy sauce

1 tsp garlic powder

1 tsp onion powder

1/2 tsp ground ginger

1/4 tsp red pepper flakes (optional for a little heat)

Instructions

  1. Place the chicken breasts in the bottom of the Crockpot.
  2. In a medium bowl, combine the BBQ sauce, pineapple chunks, brown sugar, soy sauce, garlic powder, onion powder, ground ginger, and red pepper flakes (if using). Mix well.
  3. Pour the sauce mixture over the chicken in the Crockpot, ensuring the chicken is fully coated.
  4. Cover and cook on low for 4-6 hours, or until the chicken is tender and easily shreds with a fork.
  5. Once the chicken is cooked, shred it using two forks, mixing it with the sauce to fully coat the meat.
  6. Serve the pineapple BBQ chicken over rice, in a sandwich, or alongside your favorite sides.

Notes

  1. For added texture and flavor, you can toss in some bell peppers, onions, or even sweet potatoes into the Crockpot.
  2. If you prefer a richer cut of meat, swap chicken breasts for thighs, which will stay juicier during the slow cooking process.
  3. For a spicier version, add more red pepper flakes or a dash of hot sauce to the sauce.
  4. Use fresh pineapple for a more vibrant, natural sweetness instead of canned pineapple.
  5. For meal prep, you can prepare the chicken and sauce mixture the night before and refrigerate it before cooking.
