This Crockpot Pineapple BBQ Chicken is the perfect dish for a busy day, combining the savory richness of BBQ chicken with the sweet and tangy flavors of pineapple. With minimal prep and the convenience of a slow cooker, this meal will have your taste buds dancing and your kitchen smelling amazing.
Ingredients
4 boneless, skinless chicken breasts
1 cup BBQ sauce
1 cup pineapple chunks (fresh or canned)
2 tbsp brown sugar
1 tbsp soy sauce
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground ginger
1/4 tsp red pepper flakes (optional for a little heat)
Instructions
- Place the chicken breasts in the bottom of the Crockpot.
- In a medium bowl, combine the BBQ sauce, pineapple chunks, brown sugar, soy sauce, garlic powder, onion powder, ground ginger, and red pepper flakes (if using). Mix well.
- Pour the sauce mixture over the chicken in the Crockpot, ensuring the chicken is fully coated.
- Cover and cook on low for 4-6 hours, or until the chicken is tender and easily shreds with a fork.
- Once the chicken is cooked, shred it using two forks, mixing it with the sauce to fully coat the meat.
- Serve the pineapple BBQ chicken over rice, in a sandwich, or alongside your favorite sides.
Notes
- For added texture and flavor, you can toss in some bell peppers, onions, or even sweet potatoes into the Crockpot.
- If you prefer a richer cut of meat, swap chicken breasts for thighs, which will stay juicier during the slow cooking process.
- For a spicier version, add more red pepper flakes or a dash of hot sauce to the sauce.
- Use fresh pineapple for a more vibrant, natural sweetness instead of canned pineapple.
- For meal prep, you can prepare the chicken and sauce mixture the night before and refrigerate it before cooking.
