Description

These cucumber cream cheese bites are fresh, creamy, and perfect for entertaining. Crisp cucumber slices and herby lemon cream cheese come together on soft bread for an easy appetizer.

Ingredients

  • 4 oz. cream cheese, softened
  • 2 Tbsp. fresh dill, chopped
  • Zest and juice of half a large lemon (or all of a small lemon)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 12 small slices quality white bread or pretzel rolls, sliced
  • 1/2 English cucumber, thinly sliced

Instructions

  1. In a small bowl, combine the softened cream cheese, chopped dill, lemon zest, and lemon juice. Stir until smooth and season with kosher salt and black pepper to taste.
  2. Arrange the bread or roll slices on a serving platter. Evenly spread the cream cheese mixture onto each slice.
  3. Top each bite with thin cucumber slices.
  4. Before serving, lightly sprinkle with additional black pepper and extra lemon zest if desired.

Notes

  • For best texture, assemble shortly before serving.
  • Pretzel rolls add a savory twist and extra texture.
  • Store leftover cream cheese mixture in the refrigerator for up to 3 days.
  • Fresh chives or parsley can be substituted for dill.
