Description
A flavorful and aromatic curried rice dish with sweet raisins, warm spices, and fresh cilantro. Perfect as a side or light vegetarian main course.
Ingredients
- 1 cup basmati rice
- 2 cups water
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 cup raisins
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- In a saucepan, combine the rice and water. Bring to a boil over high heat.

- In a separate skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened and translucent, about 3-4 minutes.
- Stir in the curry powder, turmeric, and cinnamon. Cook for an additional 1-2 minutes, stirring constantly.
- Add the cooked rice to the skillet, along with the raisins. Stir well to combine.
- Season with salt and pepper to taste.
- Cook for another 2-3 minutes to allow the flavors to meld together.
- Remove from heat and garnish with chopped fresh cilantro before serving.
Notes
- You can use golden or regular raisins based on preference.
- For added protein, consider stirring in chickpeas or cooked lentils.
- Adjust the spice level by adding cayenne pepper or chili flakes if desired.
