Description

A flavorful and aromatic curried rice dish with sweet raisins, warm spices, and fresh cilantro. Perfect as a side or light vegetarian main course.


Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup raisins
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a saucepan, combine the rice and water. Bring to a boil over high heat.
  3. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
  4. In a separate skillet, heat the olive oil over medium heat.
  5. Add the chopped onion and garlic, and sauté until softened and translucent, about 3-4 minutes.
  6. Stir in the curry powder, turmeric, and cinnamon. Cook for an additional 1-2 minutes, stirring constantly.
  7. Add the cooked rice to the skillet, along with the raisins. Stir well to combine.
  8. Season with salt and pepper to taste.
  9. Cook for another 2-3 minutes to allow the flavors to meld together.
  10. Remove from heat and garnish with chopped fresh cilantro before serving.

Notes

  • You can use golden or regular raisins based on preference.
  • For added protein, consider stirring in chickpeas or cooked lentils.
