Ingredients
- 6 ounces dark chocolate (60% cacao or higher), chopped
- 2 tablespoons unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1/4 cup Baileys Irish Cream
- 1/2 teaspoon vanilla extract
- 1/2 cup heavy cream
- Pinch of salt
- Whipped cream, for topping (optional)
- Chocolate shavings, for garnish (optional)
Instructions
- In a heatproof bowl over a pot of simmering water (double boiler), melt the chopped dark chocolate and butter, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the egg yolks with sugar until pale and thick. Slowly whisk in the Baileys Irish Cream and vanilla extract.
- Gradually add the melted chocolate mixture to the yolk mixture, stirring to combine.
- In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gently fold the egg whites into the chocolate mixture until just combined.
- In a separate bowl, beat the heavy cream until soft peaks form. Fold it into the mousse mixture.
- Spoon the mousse into serving glasses or bowls and chill in the refrigerator for at least 2 hours or until set.
- Before serving, top with whipped cream and chocolate shavings, if desired.
