Ingredients
- 1/2 cup Cream Cheese, softened
- 2 tablespoons Sugar
- 1/2 teaspoon Vanilla Extract
- 1/2 cup Strawberries, diced
- 4 Tortillas, 6-inch
- 2 tablespoons Butter, softened
- 1 teaspoon Sugar
- 1/2 teaspoon Cinnamon
- Strawberry sauce for dipping
Instructions
- In a mixing bowl, beat together softened cream cheese, 2 tablespoons sugar, and vanilla extract until smooth.
- Gently fold in the diced strawberries.
- Spread half of the strawberry cream cheese mixture on one tortilla.
- Heat a pan over medium-high and melt 1 teaspoon of butter. Place the tortilla in the pan, cream cheese side up.
- Spread 1 teaspoon of butter on a second tortilla and place it on top, butter side up.
- Cook for 2-3 minutes on each side, or until crispy and golden brown.
- Mix together 1 teaspoon sugar and 1/2 teaspoon cinnamon, and sprinkle on top of the finished quesadilla.
- Repeat the process with the remaining ingredients to make the second cheesecakeadilla.
- Let rest for 2 minutes after cooking, then slice and serve with strawberry sauce for dipping.
