Description

Decadent Strawberry Cheesecakeadillas are a sweet twist on quesadillas, featuring a creamy strawberry cheesecake filling between golden, buttery tortillas, finished with a cinnamon-sugar sprinkle and served with strawberry sauce.


Ingredients

  • 1/2 cup Cream Cheese, softened
  • 2 tablespoons Sugar
  • 1/2 teaspoon Vanilla Extract
  • 1/2 cup Strawberries, diced
  • 4 Tortillas, 6-inch
  • 2 tablespoons Butter, softened
  • 1 teaspoon Sugar
  • 1/2 teaspoon Cinnamon
  • Strawberry sauce for dipping

Instructions

  1. In a mixing bowl, beat together softened cream cheese, 2 tablespoons sugar, and vanilla extract until smooth.
  2. Gently fold in the diced strawberries.
  3. Spread half of the strawberry cream cheese mixture on one tortilla.
  4. Heat a pan over medium-high and melt 1 teaspoon of butter. Place the tortilla in the pan, cream cheese side up.
  5. Spread 1 teaspoon of butter on a second tortilla and place it on top, butter side up.
  6. Cook for 2-3 minutes on each side, or until crispy and golden brown.
  7. Mix together 1 teaspoon sugar and 1/2 teaspoon cinnamon, and sprinkle on top of the finished quesadilla.
  8. Repeat the process with the remaining ingredients to make the second cheesecakeadilla.
  9. Let rest for 2 minutes after cooking, then slice and serve with strawberry sauce for dipping.
