This Deconstructed Wonton Soup delivers all the classic flavors of traditional wonton soup—savory pork, fragrant garlic and ginger, tender bok choy—without the hassle of folding dumplings. A quick, hearty one-pot meal perfect for busy weeknights, this low-carb Chinese-inspired soup is comforting, flavorful, and ready in under 30 minutes.
Ingredients

1 tablespoon peanut oil (or vegetable oil)

1 tablespoon minced ginger
 - 
2 cloves garlic, minced
 - 
1/2 cup chopped green onions (white and green parts separated)
 - 
1 pound (450g) ground pork
 - 
1 tablespoon Shaoxing wine (or dry sherry)
 - 
1 tablespoon light soy sauce
 - 
1 teaspoon dark soy sauce
 - 
1/2 teaspoon salt (or to taste)
 - 
1/4 teaspoon ground white pepper
 - 
6 cups chicken broth (or low-sodium chicken stock)
 - 
4 to 5 baby bok choy, halved or quartered
 - 
2 teaspoons sesame oil
 - 
Optional: chili oil for serving
 
Instructions
- 
Heat oil in a large pot over medium heat. Add ginger, garlic, and the white parts of the green onions. Stir-fry for 1 minute until fragrant.

Add ground pork and cook, breaking it apart, until fully cooked and lightly browned (4–5 minutes).
 - 
Stir in Shaoxing wine, light soy sauce, dark soy sauce, salt, and white pepper.
 - 
Pour in chicken broth and bring to a boil.
 - 
Add bok choy and return to a boil. Reduce heat and simmer for 4–5 minutes, until tender.
 - 
Drizzle in sesame oil. Adjust seasoning as needed.

Serve hot, garnished with green onion tops and optional chili oil.

Substitute ground chicken or turkey for pork if preferred.
