Ingredients

  • 1 (3 to 4 pound) beef eye of round roast
  • 2 teaspoons olive oil
  • 2 teaspoons kosher salt
  • 1 ½ teaspoons freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme

Instructions

  1. Remove the roast from the refrigerator and allow it to sit at room temperature for 1 hour before cooking.
  2. Preheat the oven to 500°F (260°C).
  3. In a small bowl, combine the salt, pepper, garlic powder, onion powder, paprika, and thyme.
