Ingredients

  • For the Eggs:
    12 large eggs, hard-boiled and peeled
  • For the Pasta:
    16 oz elbow macaroni, cooked and cooled
  • For the Dressing:
    1 cup mayonnaise
  • ¼ cup yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon granulated sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (plus extra for garnish)
  • Salt, to taste
  • Black pepper, to taste
  • For the Vegetables:
    ½ cup celery, finely chopped
  • ½ cup red onion, finely chopped
  • ¼ cup dill pickles, finely chopped
  • For the Herbs:
    2 tablespoons fresh parsley, chopped (optional, for color)

Instructions

  1. Prepare the Eggs: Halve the hard-boiled eggs. Remove the yolks and place them in a large mixing bowl. Set aside the chopped egg whites. Mash the egg yolks thoroughly.
  2. Make the Dressing: To the mashed egg yolks, add mayonnaise, yellow mustard, apple cider vinegar, sugar, garlic powder, paprika, salt, and black pepper. Stir until a smooth, creamy consistency is achieved.
  3. Combine Ingredients: Add the cooked, cooled elbow macaroni, chopped egg whites, celery, red onion, dill pickles, and parsley (if using) to the dressing. Mix gently until all ingredients are evenly coated.
  4. Chill and Serve: Cover and refrigerate the salad for at least 1 hour to allow the flavors to meld together. Before serving, garnish with additional paprika for a pop of color and extra flavor.
