Description

Ingredients

2 cups cooked elbow macaroni or any short pasta

1 cup dill pickles, diced

1/4 cup diced red onion

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon Dijon mustard

2 teaspoons dill weed (fresh or dried)

1 tablespoon pickle juice (from the pickle jar)

Salt and pepper, to taste


Instructions

  1. Cook the pasta according to the package directions, then drain and rinse with cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cooked pasta, diced pickles, and red onion.
  3. In a separate small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, dill weed, and pickle juice until smooth.
  4. Pour the dressing over the pasta mixture and stir gently until well coated.
  5. Taste and adjust seasoning with salt and pepper as needed.
  6. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
