A creamy, cheesy chicken casserole layered with crushed Doritos, perfect for an easy and flavorful family dinner.
Ingredients
- 4 cups shredded cooked chicken
- 1 (10.5-ounce) can cream of chicken soup
- 1 (10-ounce) can Rotel (diced tomatoes and green chilies), drained
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 3 cups crushed Doritos (any flavor)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the shredded chicken, cream of chicken soup, Rotel, 1 cup of cheddar cheese, sour cream, garlic powder, onion powder, and chili powder. Stir until well combined.
- In a greased 9×13-inch baking dish, spread half of the crushed Doritos evenly on the bottom.
- Pour the chicken mixture over the Doritos layer, spreading it out evenly.
- Top the casserole with the remaining crushed Doritos, then sprinkle the remaining 1/2 cup of cheddar cheese over the top.
- Bake for 25-30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving. Serve hot and enjoy!

- Use rotisserie chicken for a quick and easy shortcut.
- Adjust the spice level by using mild or hot Rotel.
- Substitute Greek yogurt for sour cream for a lighter version.
