Description

These Double Chocolate Cream Puffs are a decadent dessert featuring crisp chocolate choux pastry shells filled with a rich chocolate pastry cream and topped with smooth chocolate ganache.


Ingredients

  • 1/2 cup (110g) unsalted butter
  • 1 cup (240ml) water
  • 1/4 tsp salt
  • 2 tbsp (15g) unsweetened cocoa powder
  • 1 cup (125g) all-purpose flour
  • 4 eggs
  • 1 1/4 cups (300ml) milk
  • 1/4 cup (50g) sugar
  • 2 tbsp (15g) cornstarch
  • 2 tbsp (15g) flour
  • 2 tbsp (15g) unsweetened cocoa powder
  • 2 oz (60g) semisweet chocolate, chopped
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1 tbsp (15g) unsalted butter
  • 4 oz (120g) semisweet chocolate, chopped
  • 1/2 cup (120ml) whipping cream

Instructions

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine butter, water, salt, and cocoa powder. Bring to a boil.
  3. Add flour all at once and stir vigorously until the mixture pulls away from the sides of the pan and forms a ball.
  4. Remove from heat and let cool for 5 minutes. Add eggs one at a time, mixing well after each addition until smooth.
  5. Transfer the dough to a piping bag and pipe small mounds onto the baking sheet.
  6. Bake for 30–35 minutes until puffed and dry. Let cool completely.
  7. For the filling, heat milk in a saucepan until hot but not boiling.
  8. In a bowl, mix sugar, cornstarch, flour, cocoa, and egg yolks. Gradually pour in the hot milk while whisking constantly.
  9. Return the mixture to the saucepan and cook over medium heat, whisking constantly until thickened.
  10. Remove from heat and add chopped chocolate, vanilla, and butter. Mix until smooth. Let cool, then refrigerate for at least 1 hour.
  11. For the ganache, heat cream in a small saucepan until simmering. Pour over chopped chocolate and let sit 1 minute, then stir until smooth.
  12. Cut tops off the cream puffs and fill with chocolate pastry cream. Replace tops and drizzle with chocolate ganache.

Notes

  • Ensure you stir constantly while cooking the pastry cream to avoid lumps.
  • Use a piping bag for even-sized cream puffs.
  • Chill the pastry cream completely before filling the puffs.
