Description

These Dulce de Leche Cheesecake Bars feature a creamy vanilla cheesecake layered over a buttery graham cracker crust and swirled with rich caramelized dulce de leche. A decadent yet easy dessert perfect for gatherings or special treats.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup dulce de leche
  • 1/4 cup heavy cream
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a greased 9×13-inch baking pan.
  3. Bake the crust for 10 minutes, then remove from oven and allow to cool slightly.
  4. In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and salt.
  6. Pour the cheesecake batter evenly over the cooled crust.
  7. In a small bowl, warm the dulce de leche and heavy cream in the microwave for 20–30 seconds until softened, then stir until smooth.
  8. Drizzle the dulce de leche mixture over the cheesecake batter and use a knife or toothpick to gently swirl.
  9. Bake for 30–35 minutes, or until the center is set with a slight jiggle.
  10. Cool to room temperature, then refrigerate for at least 4 hours or overnight before slicing into bars.

Notes

  • For cleaner slices, chill thoroughly and wipe the knife clean between cuts.
  • Store covered in the refrigerator for up to 5 days.
  • You can substitute digestive biscuits for graham crackers if preferred.
  • Serve with an extra drizzle of dulce de leche for added richness.
