Description

A unique twist on the classic Italian dessert, this Earl Grey Tiramisu infuses the creamy layers with the floral, citrusy notes of Earl Grey tea, creating a light yet indulgent treat.


Ingredients

  • 1 cup water
  • 6 Earl Grey tea bags
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon dark rum (optional)
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1/3 cup water
  • 16 ounces mascarpone cheese, at room temperature
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 7 ounces ladyfingers (about 24 pieces)
  • 2 tablespoons cocoa powder, for dusting
  • Optional: edible flowers or lemon zest for garnish

Instructions

  1. Bring 1 cup of water to a boil, then steep the Earl Grey tea bags for 5 minutes. Remove the bags and stir in 1/4 cup sugar, lemon juice, and optional rum. Set aside to cool.
  2. In a heatproof bowl, whisk the egg yolks, 3/4 cup sugar, and 1/3 cup water. Set over a pot of simmering water and whisk constantly for 5 to 7 minutes until thick and pale. Remove from heat and let cool.
  3. Add the mascarpone to the cooled egg mixture and beat until smooth.
  4. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until combined.
  5. Dip each ladyfinger briefly into the cooled Earl Grey syrup and arrange them in a single layer in a 9×9-inch pan.
  6. Spread half the mascarpone filling over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining filling.
  7. Cover and refrigerate for at least 6 hours, preferably overnight.
  8. Before serving, dust the top with cocoa powder and garnish with edible flowers or lemon zest if desired.
