A unique twist on the classic Italian dessert, this Earl Grey Tiramisu infuses the creamy layers with the floral, citrusy notes of Earl Grey tea, creating a light yet indulgent treat.
Ingredients
- 1 cup water
- 6 Earl Grey tea bags
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon dark rum (optional)
- 6 large egg yolks
- 3/4 cup granulated sugar
- 1/3 cup water
- 16 ounces mascarpone cheese, at room temperature
- 1 1/2 cups heavy cream
- 1 teaspoon vanilla extract
- 7 ounces ladyfingers (about 24 pieces)
- 2 tablespoons cocoa powder, for dusting
- Optional: edible flowers or lemon zest for garnish
Instructions
- Bring 1 cup of water to a boil, then steep the Earl Grey tea bags for 5 minutes. Remove the bags and stir in 1/4 cup sugar, lemon juice, and optional rum. Set aside to cool.
- In a heatproof bowl, whisk the egg yolks, 3/4 cup sugar, and 1/3 cup water. Set over a pot of simmering water and whisk constantly for 5 to 7 minutes until thick and pale. Remove from heat and let cool.
- Add the mascarpone to the cooled egg mixture and beat until smooth.
- In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until combined.
- Dip each ladyfinger briefly into the cooled Earl Grey syrup and arrange them in a single layer in a 9×9-inch pan.
- Spread half the mascarpone filling over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining filling.
- Cover and refrigerate for at least 6 hours, preferably overnight.
- Before serving, dust the top with cocoa powder and garnish with edible flowers or lemon zest if desired.
