Description

These easiest-ever black bean burgers are quick, flavorful, and made with pantry staples. Perfect for a weeknight dinner or meal prep, they’re crispy on the outside and tender inside, with bold seasoning and simple ingredients.


Ingredients

  • 2 (15 oz) cans black beans, drained and rinsed
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 small red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp kosher salt
  • 2 tbsp olive oil, for cooking
  • Burger buns and desired toppings (lettuce, tomato, avocado, etc.)

Instructions

  1. In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but still a bit chunky.
  2. Add the panko breadcrumbs, eggs, red onion, garlic, smoked paprika, cumin, chili powder, and salt to the bowl. Mix until well combined.
  3. Let the mixture sit for 5–10 minutes to allow the breadcrumbs to absorb moisture.
  4. Form the mixture into 4–5 patties, pressing them firmly to hold together.
  5. Heat olive oil in a skillet over medium heat. Add the patties and cook for 4–5 minutes per side, or until crisp and browned.
  6. Serve on burger buns with your favorite toppings.

Notes

  • The patties can be made ahead and stored in the fridge for up to 3 days.
  • You can freeze uncooked patties between layers of parchment paper for up to 3 months.
  • Try adding chopped cilantro or jalapeños for extra flavor.
