These festive Easter Cake Mix Cookie Bars are soft, chewy, and packed with colorful Easter M&Ms and chocolate chips. An easy spring dessert that is perfect for sharing at holiday gatherings.
Ingredients
- 1 box yellow cake mix (15.25 oz)
- 2 eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup Easter M&M candies
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix the yellow cake mix, eggs, vegetable oil, and vanilla extract until a soft dough forms.
- Fold in the Easter M&Ms and chocolate chips until evenly distributed.
- Press the dough evenly into the prepared baking pan.
- Bake for 20–25 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool completely before slicing into 16 bars and serving.
Notes
- Do not overbake to keep the bars soft and chewy.
- Store in an airtight container at room temperature for up to 4 days.
- You can substitute different seasonal candies for other holidays.
- For cleaner slices, chill the bars for 30 minutes before cutting.
