Description
A simple and flavorful cherry compote made with just a few ingredients, perfect for topping desserts, yogurt, or toast.
Ingredients
- 1 lb cherries, pitted and halved
- 2 tbsp sugar (brown sugar or coconut sugar preferred)
- 1/2 tsp almond extract (optional)
- 1 tsp kirsch or other fruit liqueur (optional)
Instructions
- Cut the cherries in half and remove pits and stems.
- Add cherries and sugar to a medium pot. Cover and bring to a boil.
- Reduce heat to a gentle simmer and cook for 12–14 minutes, stirring occasionally, until the cherries break down.
- Remove from heat and stir in almond extract and/or kirsch if using.
- Allow to cool, then transfer to a glass jar with a lid. Refrigerate until needed; the compote will thicken as it cools.
Notes
- Use fresh or frozen cherries; if using frozen, no need to thaw.
- Adjust sugar based on the sweetness of your cherries.
- Great served over pancakes, ice cream, yogurt, or oatmeal.
- Store in the refrigerator for up to 1 week.
