Description

A simple and flavorful cherry compote made with just a few ingredients, perfect for topping desserts, yogurt, or toast.


Ingredients

  • 1 lb cherries, pitted and halved
  • 2 tbsp sugar (brown sugar or coconut sugar preferred)
  • 1/2 tsp almond extract (optional)
  • 1 tsp kirsch or other fruit liqueur (optional)

Instructions

  1. Cut the cherries in half and remove pits and stems.
  2. Add cherries and sugar to a medium pot. Cover and bring to a boil.
  3. Reduce heat to a gentle simmer and cook for 12–14 minutes, stirring occasionally, until the cherries break down.
  4. Remove from heat and stir in almond extract and/or kirsch if using.
  5. Allow to cool, then transfer to a glass jar with a lid. Refrigerate until needed; the compote will thicken as it cools.

Notes

  • Use fresh or frozen cherries; if using frozen, no need to thaw.
  • Adjust sugar based on the sweetness of your cherries.
  • Great served over pancakes, ice cream, yogurt, or oatmeal.
  • Store in the refrigerator for up to 1 week.
