Ingredients

 - 16 oz processed cheese (such as Velveeta), cubed
 - 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
 - 1 packet taco seasoning
 - 1/4 cup milk (optional, for thinning)
 - 1/2 cup diced onion (optional, for extra flavor)
 - 1–2 tbsp diced jalapeños or green chilies (optional, for heat)
 
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
 - Stir in taco seasoning and a splash of water. Simmer for a few minutes until the beef is fully coated and the seasoning is absorbed.
 - In a large saucepan or slow cooker, combine cubed processed cheese and diced tomatoes with green chilies.
 - Heat over low, stirring occasionally, until the cheese is melted and smooth.
