Description
A quick and comforting carrot, ginger, and apple soup that’s naturally sweet, warming, and perfect for a light meal.
Ingredients
- 1 lb carrots, ends trimmed and roughly chopped (no need to peel)
- 2–3 sweet apples, cored and roughly chopped (no need to peel), about 15 oz
- 1-inch piece ginger, roughly chopped
- 3 cloves garlic, crushed
- 1/2 tsp coriander powder
- 4 cups vegetable stock/broth or water
- Salt & pepper to taste
Instructions
- Place carrots, apples, ginger, garlic, and coriander powder into a large pot.
- Cover with vegetable stock or water and bring to a boil.
- Reduce heat, cover, and simmer for about 10 minutes or until the carrots are tender.
- Season with salt and pepper, then blend the soup until smooth using a blender or immersion blender.
- Reheat if needed and serve warm, optionally with bread.
Notes
- If using water instead of stock, adjust seasoning with extra salt for better flavor.
- For a creamier texture, add a splash of coconut milk before blending.
- Store leftovers in the refrigerator for up to 3 days or freeze for longer storage.
- Garnish with fresh herbs, a drizzle of olive oil, or roasted seeds for added texture.
