Description

A quick and comforting carrot, ginger, and apple soup that’s naturally sweet, warming, and perfect for a light meal.


Ingredients

  • 1 lb carrots, ends trimmed and roughly chopped (no need to peel)
  • 23 sweet apples, cored and roughly chopped (no need to peel), about 15 oz
  • 1-inch piece ginger, roughly chopped
  • 3 cloves garlic, crushed
  • 1/2 tsp coriander powder
  • 4 cups vegetable stock/broth or water
  • Salt & pepper to taste

Instructions

  1. Place carrots, apples, ginger, garlic, and coriander powder into a large pot.
  2. Cover with vegetable stock or water and bring to a boil.
  3. Reduce heat, cover, and simmer for about 10 minutes or until the carrots are tender.
  4. Season with salt and pepper, then blend the soup until smooth using a blender or immersion blender.
  5. Reheat if needed and serve warm, optionally with bread.

Notes

  • If using water instead of stock, adjust seasoning with extra salt for better flavor.
  • For a creamier texture, add a splash of coconut milk before blending.
  • Store leftovers in the refrigerator for up to 3 days or freeze for longer storage.
