Ingredients

  • 1 ½ pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 bell peppers, thinly sliced
  • 1 small yellow onion, thinly sliced
  • 2 cups cooked cilantro lime rice
  • Guacamole, for serving
  • Pico de gallo or salsa, for serving
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large bowl, mix olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Add chicken thighs and toss to coat. Let marinate for at least 30 minutes.
  2. Heat a grill or grill pan over medium-high heat. Cook chicken for 5-6 minutes per side, or until fully cooked. Let rest before slicing.
  3. In a skillet over medium heat, sauté sliced bell peppers and onions with a bit of oil until soft and slightly charred, about 8-10 minutes.
