This Easy Cinnamon Roll Coffee Cake transforms the classic cinnamon roll flavor into a marbled coffee cake that’s quick and simple to make. Perfect for breakfast, brunch, or dessert with a soft cake base, cinnamon-butter swirl, and vanilla glaze.
Ingredients
- 3 cups flour
- 1 cup granulated sugar
- 2 large eggs
- 1 ½ cups whole milk
- 1 tbsp baking powder
- 1 tsp vanilla extract
- 1 cup melted unsalted butter
- 1 cup brown sugar
- 3 tsp cinnamon
- 2 tbsp flour
- 1 cup powdered sugar
- 1 tsp vanilla extract (for glaze)
- 2–3 tbsp milk (for glaze)
Instructions
- Preheat your oven to 350 °F (175 °C).
- Spray a 9×13-inch baking pan with non-stick spray (preferably with flour included).
- In a large bowl, combine flour, sugar, eggs, vanilla, milk, and baking powder; mix well.
- Pour the cake batter into the prepared pan.
- In another bowl, mix together the melted butter, brown sugar, cinnamon, and flour for the topping.
- Spoon or drizzle the topping mixture over the cake batter.
- Use a knife to swirl the topping into the cake batter, creating a marbled effect.
- Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
- In a small bowl, whisk together powdered sugar, vanilla extract, and milk to make the glaze.
- Drizzle the glaze over the warm cake and let it set before slicing and serving.
