Description

This Easy Cinnamon Roll Coffee Cake transforms the classic cinnamon roll flavor into a marbled coffee cake that’s quick and simple to make. Perfect for breakfast, brunch, or dessert with a soft cake base, cinnamon-butter swirl, and vanilla glaze.

Ingredients

  • 3 cups flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ½ cups whole milk
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • 1 cup melted unsalted butter
  • 1 cup brown sugar
  • 3 tsp cinnamon
  • 2 tbsp flour
  • 1 cup powdered sugar
  • 1 tsp vanilla extract (for glaze)
  • 23 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 350 °F (175 °C).
  2. Spray a 9×13-inch baking pan with non-stick spray (preferably with flour included).
  3. In a large bowl, combine flour, sugar, eggs, vanilla, milk, and baking powder; mix well.
  4. Pour the cake batter into the prepared pan.
  5. In another bowl, mix together the melted butter, brown sugar, cinnamon, and flour for the topping.
  6. Spoon or drizzle the topping mixture over the cake batter.
  7. Use a knife to swirl the topping into the cake batter, creating a marbled effect.
  8. Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
  9. In a small bowl, whisk together powdered sugar, vanilla extract, and milk to make the glaze.
  10. Drizzle the glaze over the warm cake and let it set before slicing and serving.

Notes

  • Add chopped pecans or walnuts to the topping for extra texture.
  • Fold in small apple chunks to the batter for an apple-cinnamon variation.
  • Substitute some milk in the glaze with maple syrup for a richer flavor.
  • Add a pinch of nutmeg or cardamom to the cake batter for a spicier twist.
  • Wrap slices and freeze up to 2 months for future enjoyment.
  • Use plant-based milk and flax eggs for a vegan version.
