Description

These cornbread muffins are soft, moist, and lightly sweetened, making them the perfect side for chili, soups, or a comforting snack. They’re easy to prepare and bake in just 20 minutes.


Ingredients

  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1 cup (120g) yellow cornmeal
  • 1/2 teaspoon baking soda
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup (135g) packed light or dark brown sugar
  • 1/3 cup (75g) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 3/4 cup (180ml) buttermilk, at room temperature
  • 1/4 cup (60ml) milk, at room temperature (any kind)

Instructions

  1. Preheat the oven to 375°F (191°C) and grease a 12-count muffin pan or line with cupcake liners.
  2. In a large bowl, whisk the flour, cornmeal, baking soda, baking powder, salt, and brown sugar together.
  3. In a medium bowl, whisk the melted butter, eggs, buttermilk, and milk together.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  6. Bake for 17–20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely or serve warm.

Notes

  • Storage: Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 1 week.
  • Freezing: Muffins freeze well for up to 3 months. Thaw at room temperature or reheat in the microwave.
  • Buttermilk substitute: If you don’t have buttermilk, you can use a DIY version with milk and vinegar or lemon juice.
  • Add-ins: You can add corn kernels, jalapeños, or shredded cheese for variation.
