Description

A light and creamy twist on classic tiramisu made with cottage cheese for a protein-rich dessert that’s quick and easy to prepare. Perfect for a no-bake treat with rich coffee flavor.


Ingredients

  • 1 cup cottage cheese
  • 1/2 cup mascarpone cheese
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup brewed espresso or strong coffee, cooled
  • 2 tbsp coffee liqueur (optional)
  • 1216 ladyfinger cookies
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Blend the cottage cheese in a food processor until smooth and creamy.
  2. In a bowl, mix the blended cottage cheese, mascarpone, powdered sugar, and vanilla extract until fully combined.
  3. In a shallow dish, combine the cooled coffee and coffee liqueur if using.
  4. Quickly dip each ladyfinger into the coffee mixture and layer them in a serving dish.
  5. Spread half of the cream mixture over the ladyfingers.
  6. Repeat with another layer of dipped ladyfingers and the remaining cream mixture.
  7. Dust the top with cocoa powder.
  8. Refrigerate for at least 4 hours before serving for best texture and flavor.
