Ingredients

  • 2 cups whole milk
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Ground nutmeg (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, heat the milk over medium heat just until warm. Do not boil.
  3. In a mixing bowl, whisk the eggs, sugar, salt, and vanilla until well combined.
  4. Slowly add the warm milk to the egg mixture, whisking constantly to avoid cooking the eggs.
  5. Strain the mixture through a fine sieve into a large measuring cup or bowl to ensure smooth texture.
  6. Pour the custard into ramekins or a baking dish.
  7. Place the ramekins or baking dish in a larger baking pan and fill the pan with hot water halfway up the sides (water bath).
  8. Sprinkle ground nutmeg on top of the custard.
  9. Bake for 45–50 minutes or until the custard is set but still slightly jiggly in the center.
  10. Remove from the oven and let cool. Chill before serving if desired.
